I received an email from James W. at ACDSee Support that solved my problem.
Jim asked me to open the Registry Editor, find the "Computer\HKEY_CURRENT_USER\Software\ACD Systems\ACDSee Ultimate\160" folder, back it up, delete it, and then restart ACDSee. (The "160" name would be different depending on which ACDSee Ultimate version you are using).
I did this and it fixed my menu. But it also deleted my Thumbnail Info setup, my Metadata Presets, my Metadata Views, my workspace layout, and other settings. I fiddled with editing exported registry files by hand and re-loading them to try to restore my settings without killing the Sort menu again, and I succeeded. But I'm not sure which registry changes were the ones that fixed my Sort menu, and it would have been faster if I had just re-created my settings in ACDSee the normal way.
James had asked me to send him the registry export file, presumably so that they might try to identify which registry key was messing up my Sort menu. If he gets back to me, I will post the result here.

Here as confirmation is a screen shot of my Ultimate 2023 sort menu.
It would appear you have an issue with your particular installation. In Manage mode you could try View\Reset Layout. Note that that will cause ACDSee to restart so save any work in progress. It will also return the Manage Mode layout to default so you will have to re-arrange that after if you have a custom layout.

Imho this should be part of the workspaces, including active View (F8 . . . F12), columns layout (F12), visibility of Thumbnail-Info (F8) . . . You name it. Simply everything visible on screen.
It's a 15 year old wish. [sigh]

Feature Request: Pin fields to Sort menu (or restore Photo Studio 2021 Sort menu)
I want to pin my favorite sort fields to the Sort menu in ACDSee Photo Studio.
I can't find any setting that allows this.
I have four or five fields that I am constantly sorting on when I scan a batch of photos, to help me find photos with fields I'm not finished with yet. It is a huge pain to have to constantly go into the More... window to pick the sort field I want.
In ACDSee Ultimate 2021, it wasn't a huge problem because the menu displayed 8 choices for fields to sort on, and it seemed like it retained my most recent or most common choices:
ACDSee Ultimate 2023 is only showing me three choices, always Filename, File Location, and the most recent one I selected. Now I have to use the More... window EVERY TIME I do a sort. I have assigned the Ctrl-D key to sort by Database Date, but I don't want to mess with more keyboard assignments.
